Chaos and uncertainty are my themes.This time, the chaos isn’t mine; it swirls around me, while I am in the calm center for a change. My calm center is the kitchen. Chaos and uncertainty soothed by dough. Yeast doughs especially. A forgiving one even more so.



Yeast in warm milk with honey, eggs, butter and salt. Bread flour. They get to know each other.


Dough rests; then the folding begins.



The first folds are sticky, messy, disorganized. The yeast is still sleepy.



After a few more folds and turns, the yeast is awake. Nice stretchy dough, turning smooth and pillowy.
The dough then chills in the fridge until tomorrow.
